Best Ever Dinner Rolls

With convenient, ready-made dough and rolls everywhere in the grocery store, I’ve always considered homemade dinner rolls a labor of love! These rolls are simple and spectacular!

Ingredients

  • 3 1/2-4 cups bread flour, divided
  • 1 tsp salt
  • 1/4 cup sugar
  • 2 1/4 tsp or 1 square packet rapid rise yeast
  • 2/3 cup water
  • 1/3 cup milk
  • 1/4 cup + 1 tbsp canola oil, divided
  • 1 egg
  • 2-3 tbsp butter, divided

    In a large bowl or stand mixer bowl, whisk together 3 cups of the flour, salt, sugar and yeast. To a microwave safe measuring cup, combine water, milk and canola oil. Heat for 20 seconds, stir, then heat an additional 15-20 seconds or until the mixture is warm to touch, about 105-110°F. Add the wet mixture to the dry ingredients and mix with a mixer on medium speed for 1 minute. Add the egg, mix until slightly incorporated with the dough, then add 1/4 cup flour at a time until the dough is no longer sticking/pulling from the sides. The dough will typically need a 1/2-1 cup in this step. Knead the dough on medium speed for 4 minutes. Line a medium bowl with remaining oil, add the dough, cover and rest for 20 minutes. Remove the dough and knead for 1 minute on a floured surface. Roll with a floured rolling pin to desired thickness and cut with a floured round cutter (mine are 3/4” thick with a 2 1/2” round cutter to make 15 rolls). Dip each roll in 1 tablespoon melted butter and place in a buttered 13”x9” pan. Cover and allow the rolls to rise in a proof set oven or warm place for 2-3 hours. Bake in a preheated 350°F oven for 25-30 minutes or until golden brown. Remove from the oven and brush with remaining melted butter. *If desired, you can make the dough ahead of time and refrigerate or freeze. Pull from the freezer to the refrigerator to thaw the night before. Pull from the refrigerator 3 hours to proof before bake time. *This dough can also be used for cinnamon rolls. Roll the dough to a 14”x9” rectangle. Spread filling to within a 1/4” margin of the dough. The filling: blend together 2/3 cup dark or light brown sugar, 1 1/2 tbsp ground cinnamon, 1/4 cup softened butter. For large rolls, roll from the 9” side, and for small rolls from the 14” side. Once rolled, seal the seam of the roll and lay seam side down. Large rolls, cut 1” apart for 9 rolls. Small rolls, cut 3/4-1” apart for 14-16 rolls. Bake at 350°F for 20-25 minutes. Frost with cream cheese frosting. Frosting ingredients: blend 4oz softened cream cheese, 3 tbsp softened butter, 3/4 cup powdered sugar, 1/2 tsp vanilla extract.
