Beef & Bacon Jalapeno Poppers

These are a dynamo, low-carb, delicious appetizer!


  • 6 jalapeño peppers
  • 6 thin bacon slices, halved
  • 12 Lit’l Smokies sausages, halved
  • 3/4 cup pimento cheese
  • Recipe

    Preheat oven to 375°F. In a small skillet on medium-high heat, cook the halved mini sausages until caramelized, about 8-10 minutes. Line a baking sheet with aluminum foil and place a wire rack on top. Slice the jalapenos lengthwise and remove the seeds and membrane using a spoon. Fill each jalapeño slice with 1-2 tbsp pimento cheese, pressing down with the back of a spoon. Place 2 halves of the smokies on each jalapeño slice and wrap with bacon slices. Make sure the bacon is secure on the bottom of the pepper. You can secure with a toothpick if needed. Place on the prepared pan/wire rack, and bake for 35 minutes. Broil an additional 3-5 minutes, or until the cheese is bubbly and bacon browned. Rest 5 minutes before serving.
