Barbecue Beef Back Ribs

This was my first time smoking ribs and won’t be my last! Oh my word, they were absolutely AMAZING!

Ingredients

  • 2/3 cup molasses
  • 1/4 cup mustard (I use spicy stone-ground)
  • 1/4-1/2 cup barbecue rub
  • 1/2-1 cup barbecue sauce
  • Recipe

    Rinse the ribs under cold water and pat dry with paper towels. Peel the membrane or skin from the ribs and remove any excess clumps of fat. In a small bowl, whisk together molasses and mustard. On the back-side, brush or rub on 1/2 of the glaze and sprinkle on 1-2 tbsp of the barbecue rub. Brush or rub the remaining glaze on the top/meat side and sprinkle with 3-4 tbsp barbecue rub. Place on a sheet pan, cover, and marinate in the refrigerator 4-12 hours. Preheat your smoker to 225°F. Place the ribs on the smoker grate and cook for 5-6 hours, spritzing with apple juice every 45 minutes to an hour. Level of tenderness depends on preference, but will typically be tender with an internal temperature between 180-190°F. Brush on barbecue sauce about 1 hour prior to cook completion. Allow the ribs to rest 20 minutes tented with foil prior to slicing. Serve with additional barbecue sauce if desired.
