Balsamic Roasted Pepper Chicken Sandwich

These 4-ingredient balsamic-roasted Pure Flavor® Aurora Bites Mini Sweet Peppers are incredible! As they caramelize in the oven, the juices they release are savory, sweet and a perfect sandwich topper or on a sliced baguette with cheese and a balsamic glaze. Mini sweet peppers pack a healthy dose of fiber, vitamins C, B6, E and beta carotene and are a great addition to a heart healthy meal plan!

Ingredients

  • 1 lb Pure Flavor® Aurora Bites Mini Sweet Peppers
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Fig Jam
  • Mild White Cheddar Cheese Slices
  • Roasted Chicken, sliced
  • Herb, Sourdough or Pretzel bread

    Preheat the oven to 450°F. On a sheet pan, toss peppers with olive oil and balsamic vinegar. Sprinkle with salt. Bake 20-25 minutes or until the peppers are slightly dark and have started to collapse, flipping in between. Transfer to a dish and set aside. Heat a skillet or grill pan on medium heat. Assemble sandwiches: slice of the bread, cheese, 3 filleted peppers (stem/seeds removed), chicken and cheese. Spread fig jam on the top slice of bread. Press and grill the sandwich until the cheese has melted and bread is toasted well on both sides.
