Baked Potato Board

Charcuterie and Themed Boards are all the rage, and my creative juices are flowing with endless theme opportunities. Over the holidays, I made this Baked Potato Board to go with a steak dinner with the family. I could see it being a perfect compliment to a Chili Bar or Tailgate Party too! Just scale the ingredient amounts to match the number of people you’re feeding.

Ingredients

  • 12 Russet Potatoes
  • olive oil
  • salt/pepper
  • 8 oz cheddar cheese, all but 2 oz shredded
  • 8oz pepper jack cheese, all but 2 oz
  • shredded
  • 8 oz sour cream, dollop with a twist
  • 12 slices bacon, few strips whole and the rest crumbled
  • 6-8 green onions, few whole and the rest sliced
  • 1-2 jalapeños, top cut off and the rest minced
  • 2 sticks butter, cut into slices

    Preheat the oven to 400°F, and prepare a baking sheet with aluminum foil. Scrub/clean the potatoes and dry well. Pierce the skin on all sides with a fork, drizzle with olive oil, and sprinkle with kosher salt. Bake for 60-80 minutes or until when pinched, the potatoes are tender. Assemble your board!
