Baked Cod in a Parmesan Cream Sauce

This dish is so elegant, light, and delicious!



  • 2 tbsp butter
  • 1 1/2 tbsp cornstarch
  • 1 cup half & half
  • 1/4 cup shredded parmesan
  • Salt/White Pepper, to taste
  • COD

  • 2 6oz cod filets
  • 1/2 tsp salt
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter
  • 1 garlic clove, minced
  • 2 tbsp seasoned bread crumbs
  • Olive oil, spritz

    Preheat oven to 400ºF. In a small saucepan on medium heat, melt butter, then whisk in cornstarch. Allow to cook 30 seconds, then slowly add half & half. When mixture begins to simmer, turn to low and add parmesan. Whisk occasionally for 3-5 minutes until mixture thickens. Add salt and pepper to taste. Pat cod dry and season with salt and pepper on both sides. Melt remaining butter in a shallow dish and mix in garlic. Pour the parmesan cream sauce in the bottom of individual au gratin dishes or a baking pan. Place cod on top. Brush cod filets with garlic butter and sprinkle bread crumbs on top. Spritz with olive oil. Bake 25-30 minutes or until the cod reaches an internal temperature of 145ºF. The sauce should be bubbling and the crust golden brown.
