Asian Shrimp & Garlic Noodles

Ingredients

  • Step 1:
  • 1 tbsp tamari or soy sauce
  • 1 tsp sesame oil
  • 1 tbsp chili garlic sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp brown sugar
  • 1 tsp paprika
  • 1/2 tsp crushed red pepper
  • 1 tbsp avocado or olive oil
  • 1 lb large or jumbo shrimp, peeled and deveined
  • Step 2:
  • 2 tbsp tamari or soy sauce
  • 1 tbsp avocado or olive oil
  • 1 tsp rice vinegar
  • 1 tbsp regular or spicy honey
  • 4 green onions, thinly sliced and separate white from green
  • 3 garlic cloves, minced
  • 4oz mushrooms, sliced
  • 1 bell pepper sliced
  • Step 3:
  • 12oz noodles

    Step 1: To a medium bowl, combine tamari or soy sauce, sesame oil, chili garlic sauce, onion powder, garlic powder, brown sugar, paprika and crushed red pepper. Add the shrimp and toss to coat well. Heat a wok or skillet on medium-high heat and add oil. Once hot, add the shrimp and cook 3-4 minutes or until an internal temperature of 145°F is reached. Remove from the pan and set aside. Step 2: To a small bowl, combine soy sauce, chili oil, rice vinegar, honey, the white part of the sliced onion and garlic. Add this mixture and the mushrooms, bell pepper, garlic and whites of the onions to the same skillet on medium-high heat. Cook 4 minutes. Step 3: Cook the noodles per package directions. Reserve 2 tablespoons of the noodle water, then drain the noodles. Add the cooked noodles, shrimp and reserved noodle water to the wok, and toss all of the ingredients until combined well. Plate and garnish with sliced green onion.
